Curried Turkey with Yogurt Sauce

Ingredients

1 tbsp vegetable oil

1-1/4 lbs TURKEY THIGHS, boneless, skinless, cut into 1-inch pieces

1 c apple, diced

1 c carrot, pared and sliced

1/2 c onion, coarsely chopped

2 to 3 tsp curry powder

To taste salt and freshly ground pepper

1 c frozen green peas, thawed

1 c non- or low-fat plain yogurt, at room temperature

4 c cooked rice

1/2 c golden raisins

Directions

Heat oil in skillet; add turkey, apple, carrot and onion. Sprinkle with curry, salt and pepper. Add 2 tablespoons of water; saute over medium-low heat about 20 minutes, stirring often, until turkey pieces are lightly browned and vegetables are tender. Add peas.

Cover and cook over low heat for 10 minutes. Remove from heat; stir in yogurt until blended. Serve warm with rice. Sprinkle with raisins.
