Homestyle Turkey Gravy


1 c Turkey Drippings from roaster

2 c diced celery

2 c diced onions

1 c flour

1 Gallon cold water


2 tbsp sage

1 tbsp rosemary

2 tbsp crushed garlic

1 tbsp white pepper


In a large roasting pan, roast turkey in a 325 degree F oven until internal temperature is 165-175 degrees F. Let rest 10-15 minutes. Drain fat. Set aside 1 cup.

In a 2 gallon sauce pot, heat turkey fat over medium-high heat (butter can be used as a substitute for turkey fat). Add celery and onions. Sauté for 3 to 5 minutes, stirring frequently.

Add flour, mixing well. Cook 3-5 minutes, stirring constantly.

Add water, turkey base, sage, rosemary and garlic, mixing well. Heat to boiling.

Reduce heat and gently boil 5-7 minutes, stirring frequently. Strain.
