12 Premade biscuit dough rounds
As needed canola oil
1 Green pepper, seeded and diced
1 Small onion, diced
12 oz Idaho hash browns
12 oz scrambled egg, salt and peppered to taste
3 Slices TURKEY BACON, cooked and chopped
3 oz low-fat shredded Cheddar cheese
Press biscuits flat and mold into greased muffin tins.
Brown pepper and onion. Brown hash browns.
Lightly scramble eggs, only to the wet stage.
Mix potatoes, green peppers, and onion.
Fill each biscuit with egg, bacon and hash browns mixture. Sprinkle each with cheese.
Bake in a preheated 350°F oven for 11-13 minutes or until biscuits are golden brown.
