3 tbsp lite soy sauce
1 tbsp light brown sugar
1 tsp fresh ginger, peeled and grated
1 Clove garlic, crushed
2 lbs BONE-IN TURKEY THIGHS, with skin
2 c cooked rice
Preheat oven to 350 degrees F. Line a baking pan with aluminum foil.
In a small bowl, combine soy sauce, sugar, ginger, and garlic until blended. Pour marinade over turkey; marinate for 20 minutes.
Roast turkey thighs, turning twice, until browned and crisp, about 1 hour or until internal temperature reaches 170 degrees F.
If desired, serve with rice.
