1 lb TURKEY TENDERLOINS, cut into 1-inch cubes
1 Medium carrot, peeled and sliced thin
1 Each zucchini, trimmed & cut into 1/4-inch slices
1 Each scallion, trimmed & cut into thin diagonal slices
1 tbsp olive oil
1/2 tsp lemon peel, freshly grated
1 Small Clove garlic, crushed
1 tbsp fresh basil, finely chopped
1/2 tsp salt
1 lb orzo or other small pasta, cooked and drained
Combine turkey, carrot, zucchini, scallion, oil, lemon peel, garlic, basil, and salt in large bowl; toss to coat. Marinate 15 minutes.
Preheat oven to 350 degrees F.
Cut two 15-inch-long pieces aluminum foil. Divide turkey mixture between the two pieces of foil. Double-fold top and two side seams, making two neat packages, and place on baking sheet.
Bake on lowest oven rack 25 to 30 minutes. Let stand a few minutes before opening packets.
If desired, serve over cooked orzo or other small pasta.
