Ingredients

3 lbs Turkey, cooked and shredded (white and dark meat)

1/2 c Red onion, diced (1/4")

1 c Apple (Gala or Fuji), diced (1/2")

1/2 c Dried cranberries

1/8 c Italian parsley, chopped

1/2 c Walnuts, medium pieces

1/2 c Mayonnaise

1/4 c Honey mustard dressing

1/2 c Green onions, sliced (1/8")

1 tbsp Lime juice

1 tsp Black pepper

1 tsp Kosher salt

6 Croissants (3 oz)

As needed Leaf lettuce leaves

Directions

Using cooked and chilled turkey, shred white and/or dark meat (as desired) into 1" shreds and place in a large mixing bowl

Add onions, apples, cranberries, parsley, walnuts, mayonnaise, dressing, green onions, lime juice, salt and pepper. Mix well to evenly incorporate. Add additional salt and pepper if needed to adjust taste. Hold refrigerated until ordered.

TO BUILD: Place one leaf of green leaf lettuce on the bottom half of a croissant. Top with 1 cup of Turkey salad mix. Top with other half of croissant and serve immediately.
