Apple-Turkey Pita Pockets

Cooked Turkey


2 c COOKED TURKEY BREAST, cut into 1/2-inch cubes

2 red tart and juicy apples, cored & chopped

1/2 c celery, chopped

1 Can (8 oz) crushed pineapple, drained well

1/3 c lemon yogurt

1/4 c non-fat mayonnaise

1/2 tsp Dijon-style mustard

1/4 tsp celery seeds, crushed

4 5-inch pitas, tops cut

4 lettuce leaves


In medium bowl combine turkey, apples, celery and pineapple.

In small bowl combine yogurt, mayonnaise, mustard and celery seeds. Fold dressing into turkey mixture.

To serve, line each pita with lettuce leaf and spoon 1 cup turkey mixture into each pita.
