1-1/2 lbs TURKEY THIGHS, skinned, boned and cut into 1-inch cubes
1 tbsp vegetable oil
1 (28-oz) can no-salt-added diced tomatoes, with juices
1 c green pepper, seeded and thinly sliced
1 Clove garlic, minced
2 tbsp fresh lemon juice
1 tsp Italian seasoning, OR 1/4 tsp each basil, oregano, thyme & marjoram
Salt and freshly ground black pepper To Taste
Hot cooked rice As needed
In 3-quart saucepan, over medium-high heat, sauté turkey thighs in oil until all sides are browned.
Add tomatoes, green pepper, garlic, lemon juice, seasonings, salt and pepper. Cover, reduce heat to low and simmer about 12 minutes or until turkey is done.
Cook until thickened, stirring occasionally.
Serve over hot cooked rice.
