2-1/2 c light soy sauce
5 tbsp sesame oil
1/3 c onion, small dice
1 tbsp garlic, minced
2-1/2 tsp fresh ginger, grated
1/2 c rice wine or sherry
1 tsp red pepper flakes
To Taste black pepper
1 tsp dry mustard
3 tbsp brown sugar
20 4 oz each TURKEY STEAKS, thawed
1/4 c sesame oil
1 c rice wine vinegar
1-1/4 c light soy sauce
1/4 c brown sugar
8 Cloves garlic, crushed
1/3 c fresh ginger, grated
1-1/3 c mayonnaise
10 qt lettuce, washed, dried and torn
10 c watercress, washed and dried
5 lbs sugar snap peas, cooked
10 c mandarin orange sections, well drained
2-1/2 c cashews, toasted
For marinade: Blend 2-1/2 cups soy sauce, sesame oil, onion, garlic, ginger, rice wine, red pepper flakes, black pepper, dry mustard, and brown sugar.
Marinate thawed turkey steaks in marinade for 2 hours.
Broil steaks 3 to 3-1/2 minutes per side, 3 to 4 inches from flame to an internal temperature of 160 degrees Fahrenheit
For salad dressing: Blend sesame oil, rice wine vinegar, 1 1/4 cups soy sauce, brown sugar, garlic, ginger, and mayonnaise together thoroughly. Chill and hold for service .
For each salad: Toss lettuce, watercress, and sugar snap peas together. Place about 3 cups on each chilled serving plate.
Cut steaks into 1/4-inch strips and arrange on top of the greens. Place 1/2 cup of orange sections and 2 tablespoons of cashews around edge of plates. In a small ramekin, serve 3 tablespoons of dressing on the side.
