Ingredients

1/4 c Dijon

3 c vinaigrette

3 Gallons mixed salad greens, washed, dried and chilled

4-1/2 lbs SMOKED TURKEY, julienned

3 c dried cranberries OR cherries

6 lbs ripe avocados

1/3 c fresh lemon juice

24 6-inch bread shells

Directions

Whisk mustard into vinaigrette; reserve.

Per order: toss 2 cups chilled lettuce, 1/2 cup smoked turkey strips and 2 tablespoons dried fruit with 2 tablespoons reserved vinaigrette.

Just before service, cut avocado in chunks; toss gently with lemon juice. Fold in 1/2 cup avocado chunks.

Mound atop warmed bread shells.
