1/4 c rice wine vinegar
2 tbsp canola oil
1 tbsp fresh cilantro, chopped
1 tsp sugar
1 tsp fresh lime juice
1 tsp soy sauce
1/8 tsp hot pepper sauce
4 c mixed greens, washed, dried and chilled
1 c cucumber, scored and thinly sliced
3/4 lb SMOKED TURKEY, cut into 1/4 x 2 inch strips
1/4 c peanuts, chopped
In small bowl combine vinegar, oil, cilantro, sugar, lime juice, soy sauce, and hot sauce.
To serve, place mixed greens on four plates. Arrange cucumber slices over lettuce and top with turkey and chopped peanuts. Drizzle dressing evenly over each salad before serving.
