Blue Cheese and Herbed Crusted Turkey Tenderloins



3 tbsp fresh parsley, OR basil, oregano, thyme

1-1/2 c bread crumbs

5 oz blue cheese, crumbled

3 oz egg white

1/8 tsp white pepper

3 oz butter substitute

20 (3-oz) TURKEY TENDERLOINS, butterfly cut


Chop fresh parsley or other fresh herbs.

Combine bread crumbs, blue cheese, egg white, parsley/herbs and white pepper in a processor and process to form a coarse mixture. Set aside.

Heat 1 teaspoon of butter substitute in sauté pan over medium-high heat and sauté turkey for 2 minutes per side.

Top each turkey tenderloin with 1/2 ounce of herb mixture and spread evenly over surface. Transfer to an oven proof pan and roast in a 350 degree F. conventional oven for 7 to 8 minutes or until the internal temperature reaches 165 degrees F.

Place 2 turkey tenderloins on each serving plate and garnish with fresh herbs.
