Border Turkey Wings with Chipotle Tequila Cranberry Sauce

Ingredients

8-10 Turkey wings (thawed)

3 Tbsp Ancho chile paste

¼ c Olive oil

½ c Orange juice

¼ c Lime juice

2 tbsp Roasted Cumin (ground)

1 tsp Kosher salt

1 tbsp Black pepper (table grind)

2 tbsp Mexican Oregano

1-2 tbsp Weber Bold Chipotle seasoning

1 can (14oz) Cranberry sauce (whole berry style)

2 tsp Chipotle paste

2 tbsp Tequila Reposado

Directions

In a mixing bowl combine chile paste, olive oil, orange juice, lime juice, cumin, salt, pepper and oregano and whisk to combine.

Add the turkey wings and toss in marinade to evenly coat. Marinate refrigerated for a minimum of 3 hours and a maximum of 6 hours.

When ready to cook remove wings from marinade and shake off excess. Season well with Weber seasoning and place on preheated chargrill and grill for 3 minutes and turn 45 degrees. Grill for an additional 2 minutes. Turn over and repeat process and grill until wings reach an internal temp of 165°F but no higher than 175°F.

Remove from grill and place on appropriate platter. Sprinkle well with fresh chopped cilantro and crumbled cotija cheese.

In a mixing bowl combine Cranberry sauce, chipotle paste and tequila. Mix till combined and serve on the side for dipping.
