About this Dish

Move over, Buffalo wings! There’s a new sheriff in Flavortown. Buffalo turkey taquitos are a perfect (and mess free) appetizer for game days.

These handhelds are easy to make and share with your guests. The hardest choice you’ll have to make is whether to dip or load with toppings!

Ingredients

2 c cooked turkey, skinless, white and dark meat, shredded and warmed

2/3 c Buffalo sauce

24 corn tortillas, warmed

2-1/2 c shredded Mexican cheese blend

Nonstick cooking spray

Optional:

Blue cheese dressing

Mango salsa

Directions

Preheat oven to 400°F.

Mix shredded turkey and Buffalo sauce together until turkey is coated with sauce.

Place warm tortillas on work surface and add 1 heaping tablespoon turkey mixture horizontally on the bottom of each tortilla. Sprinkle 1-1/2 tablespoons cheese over turkey mixture. Roll tortillas into tight cylinders.

Spray pan with nonstick cooking spray. Place taquitos, seam side down, on baking sheet. Spray each taquito with nonstick cooking spray to coat the surfaces.

Bake 12-13 minutes, turning over halfway through cooking time.

Portion 3 taquitos to a plate. Serve blue cheese dressing for dipping and a mango salsa.
