20 Pieces French roll, 6-7 inches long

1/2 c olive oil

2 lbs, 3 oz caponata (prepared Italian eggplant appetizer)

3 lbs, 12 oz SMOKED TURKEY BREAST, sliced

10 oz aged Provolone cheese, shaved

1 lb, 14 oz Mozzarella cheese, shaved

10 c lettuce, washed, drained & shredded


Cut French roll in half lengthwise and pull out the center of the bottom half, leaving a 1/2-inch thick shell of bread. Brush both halves with olive oil and grill until heated through and toasted.

Fill bottom half of roll with caponata and layer 3 ounces sliced turkey, 1/2 ounce shaved Provolone, and 1-1/2 ounces shaved Mozzarella on top. Broil bottom half until cheese is melted and browned.

Top with 1/2 cup shredded lettuce and top half of roll. Place a frilled toothpick in each end and cut in half, on the diagonal, to serve.
