3 c boiling water
2 c couscous
Canola oil
3 c red bell pepper, seeded and diced
2 tbsp thyme
2 tbsp curry powder
1 tbsp cumin
1 tbsp allspice
1 tbsp fresh ginger root, minced
1 tbsp salt
1-1/2 tsp black pepper
1-1/2 tsp paprika
1-1/2 tsp cayenne pepper
6 lbs GROUND TURKEY
24 Each onion buns, split and toasted
1-1/2 c mayonnaise
24 Each lettuce leaves
6 Each ripe mango, peeled and thinly sliced
Add couscous to boiling water. Cover and let sit for 15 to 20 minutes. Once couscous has absorbed water, allow to cool.
In hot oil, saute red peppers with seasonings until tender; let cool.
Mix together ground turkey, couscous and red pepper saute mixture. Portion into 4-ounce patties.
Cook patties, using desired method, to 165 degrees F. Do not overcook.
Place each burger on toasted bun and top with mayonnaise, lettuce leaf and mango slice.
