1/3 c frozen tropical fruit or limeade concentrate
1/4 c white rice vinegar
1 tbsp vegetable oil
1-1/2 qt torn lettuce, washed, drained and chilled
2 c COOKED TURKEY BREAST, thinly sliced
1 papaya, pared, seeded and sliced
1/2 Small fresh pineapple, pared and cut into half-rounds
1/3 c natural California pistachios, shelled
1/4 tsp bottled red pepper flakes, crushed
Combine fruit or limeade concentrate, white rice vinegar and oil in a jar. Shake dressing well to combine.
Place chilled lettuce on 4 plates and arrange turkey slices and fresh fruit slices atop lettuce.
Sprinkle with pistachios and pepper flakes.
Serve with well-mixed dressing.
