Chesapeake Bay Turkey and Potato Salad



3/4 lb NO-SALT DELI TURKEY BREAST, cut into 1/2-inch cubes

1-1/2 lbs potatoes, cooked, peeled and cut into 1/2-inch cubes

1 package (10 oz) frozen corn, defrosted

1 c red bell pepper, seeded & cut into 2-X 1/8-inch slivers

3/4 c thinly sliced green onions, white and green parts

1/2 c low-fat mayonnaise

1/4 c chopped parsely

1 tbsp white wine vinegar

1-1/2 tsp Chesapeake Bay-style seafood seasoning

1-1/2 tsp Fresh parsley for garnish



In medium bowl combine turkey, potatoes, corn, red pepper and green onions.

In small bowl combine mayonnaise, parsely, vinegar and seafood seasoning.

Gently fold into turkey and vegetable mixture. Cover and chill 2 or more hours.

To serve, garnish with fresh parsley sprigs.
