1-1/2 lbs TURKEY TENDERLOINS
1 (1.25-oz) Package taco seasoning
1 tsp ground cumin
2 ripe mangos, peeled and diced
1 cucumber, peeled, seeded and diced
1/4 c minced red onion
1/4 c freshly squeezed lime juice
1 tbsp vegetable oil
To Taste salt and pepper
1 Large lime, cut into slices
Preheat oven to 500 degrees F.
Set turkey tenderloin on a foil-lined sheet pan. In a small bowl, stir together taco seasoning and cumin. Rub all sides of turkey with spice mix.
Roast turkey 20 to 30 minutes, turning once, until the internal temperature reaches 165 degrees F. Remove from oven and set aside.
Stir together mango, cucumber, red onion, lime juice and oil. Season to taste with salt and pepper.
To serve, slice turkey. Divide turkey among 6 dinner plates and top with salsa. Garnish with lime slices.
