1 c mayonnaise
1 tbsp chipotle in adobo, pureed
1 tsp ground cumin
1/2 tsp dried oregano leaves
10 (3-oz) TURKEY CUTLETS
10 Medium whole wheat pitas, halved
20 Large lettuce leaves
2-1/2 c diced tomatoes
2-1/2 c smoked Mozzarella, shredded
In a bowl, mix all the ingredients together well.
Cover, label, date and store under refrigeration for service.
Per order: grill turkey cutlets on a hot grill, on each side, just until heated to an internal temperature of 165 degrees F.
Spread 3/4 tablespoon Chipotle Mayonnaise in each half of pita pockets.
Lay 1 leaf lettuce into each half of pita pocket. Cut each cutlet in half and place grilled turkey into pita pockets.
Sprinkle each pita half with 1/8 cup diced tomato and 1/8 cup Mozzarella. Serve immediately.
