1/2 lb tomatoes, peeled and seeded, cut into 1/4-inch cubes
1/2 c cucumber, peeled and cut into 1/4-inch cubes
1/2 c green pepper, cut into 1/4-inch cubes
1/3 c onion, finely chopped
1 Clove garlic, finely chopped
1-1/3 c Bloody Mary tomato drink mix
In medium-sized bowl combine tomatoes, cucumber, green pepper, onion, garlic and tomato drink mix. Cover and refrigerate overnight to allow flavors to blend.
To serve, spoon mixture into soup bowls and garnish with seasoned croutons, if desired.
