Country Fried Turkey with Onion Sauce

12 oz milk

3 Large eggs

12 oz all-purpose flour

1-1/2 tsp each salt and pepper

12 (4-oz) TURKEY STEAK or CUTLETS, frozen

As needed canola oil

6 oz canola oil

1/2 c chopped onion

1 c all-purpose flour

3 c milk

1-1/2 tsp TURKEY BASE or chicken base

1-1/2 tsp white pepper



Mix milk and eggs in a shallow bowl. In another shallow bowl, mix flour, salt and pepper.

Dip frozen turkey steak in milk, then dredge in flour mixture.

Pour oil, 1/4-inch deep in sauté pan over medium heat. Cook turkey in hot oil for 5 minutes per side until well browned and the internal temperature is 165 degrees F. Add more oil if needed.

Onion Sauce

Heat oil in saucepan. Cook onion in hot oil until onion is soft. Add flour, turkey base and pepper. Stir until bubbling and golden.

Add milk while stirring. Cook 5 minutes over medium-low heat, stirring until thickened.

Assembly and Service

Place 1/4 cup Onion Sauce on warmed dinner plate and sprinkle with 1 teaspoon scallions. Place fried turkey over sauce. Garnish with additional scallions.
