Cranberry Sauced Turkey Wings

Ingredients

30 lbs TURKEY WINGS

1 (#10 can) jellied cranberry sauce

1 (#10 can) chili sauce

1 tbsp red pepper flakes

As needed nonstick cooking spray

Directions

Cut off wing tips. (Reserve for turkey stock or soups.) Cut remaining wings into 2 pieces at joint.

Stir together cranberry and chili sauces with pepper flakes in a stockpot. Cook over medium heat until smooth. Remove and reserve 10 cups sauce for dipping sauce. Cover and hold for service in refrigerator.

Spray hotel pans with nonstick cooking spray. Arrange wings in a single layer in the hotel pans.

Bake, uncovered, in a preheated 400 degree F oven for 20 minutes or until wings are lightly browned. Reduce oven to 350 degrees F.

Pour sauce over wings, turning to cover each piece completely. Cover with foil and bake 45 to 60 minutes or until wings are fork-tender and meat thermometer, inserted into wing, registers 165 degrees F

Serve 3/4 pound wings per serving with the reserved warm dipping sauce.
