1/2 c frozen egg substitute, defrosted
2 tbsp lemon juice
1/8 tsp Creole seasoning, (salt-free variety may be substituted)
1/3 c margarine, melted
2 English muffins, split and toasted
1/2 lb TURKEY HAM, cut into 4 slices
1 Medium tomato, cut into 4 slices
1 Can (14 oz) artichoke hearts, drained and cut in half
In blender container combine egg substitute, lemon juice, and creole seasoning. With motor running, slowly add hot margarine in a steady stream, until blended.
Pour mixture into 1 cup glass measure and microwave on DEFROST (30% power) for 1 minute. Stir mixture and microwave an additional 30 seconds. Allow mixture to stand 1 minute.
Spoon 2 tablespoons of sauce over each muffin half. Top with ham slice (cut to fit, if necessary), tomato slice and 2 artichoke heart halves. Top with 2 more tablespoons sauce.
