4 (4 to 5 oz) TURKEY CUTLETS

2/3 c fine bread crumbs

1/4 c Parmesan cheese, grated

1/2 tsp dried thyme

1/2 tsp dried tarragon

To Taste salt and pepper

1/4 c light mayonnaise

1 tbsp vegetable oil


Pound turkey cutlets in an even 1/4 inch thickness.

In a shallow dish, combine bread crumbs, cheese, herbs, salt and pepper.

Brush both sides of the cutlets with mayonnaise, then coat with crumb mixture.

Over medium-high heat, cook cutlets in the hot oil in a sauté pan for 4 to 5 minutes on each side or until cooked throughout.

Serve immediately with additional fresh herbs for garnish.
