Curried Turkey and Pineapple Over Couscous

2-1/2 lbs couscous

3/4 c vegetable oil

1/4 c curry powder

1-1/2 tbsp garlic, minced

1-1/2 lbs yellow onions, sliced


3 lbs fresh pineapple, cut in strips

1-1/2 lbs green pepper (or combination of red and green), cut in strips

3 c orange juice

1/4 c cornstarch

To Taste salt and white pepper

1 tsp red pepper flakes

1/4 c fresh cilantro, chopped

1/4 c almonds, sliced and toasted


Cook couscous using package instructions. Keep warm.

Heat oil in saute pan. Add curry powder and garlic and saute for 2 seconds. Add onions and saute for 2 minutes. Add turkey strips and saute for 3 to 4 minutes. Add pineapple and green pepper and saute for 2 minutes.

In a medium bowl, mix orange juice and cornstarch. Add to mixture and cook for 2 minutes or until mixture thickens. Season with salt, pepper, and red pepper flakes.

Serve over couscous and garnish with cilantro and almonds.
