2 c COOKED WHITE TURKEY, cut into 2-inch strips
1/2 c white seedless grapes
2 Each scallions, thinly sliced
2 Stalks celery, cut into small dice
1/4 c Major Grey chutney, chopped
1 tbsp curry powder
3/4 to 1 c mayonnaise
Salt and freshly ground pepper To Taste
Lettuce leaves, washed and chilled As needed
1/2 c almonds, blanched, slivered
In a bowl, combine turkey, grapes, scallions and celery.
In another bowl, combine chutney, curry powder and mayonnaise. Stir well.
Add this mixture to the turkey mixture and toss with two forks to blend. Season, cover and chill for 2 hours.
Serve on a bed of lettuce. Sprinkle with almonds at service time.
Note: This is also attractive as a sandwich filling in pita bread.
