Curried Turkey Triangles

Ingredients

1/3 c vegetable oil

2 tbsp garlic, minced

2 tbsp ginger, minced

5 medium yellow onions, chopped

1/3 c curry powder

2-1/2 lbs GROUND TURKEY

1 c raisins, chopped

2/3 c pine nuts, toasted & chopped

2/3 c fresh parsley, minced

2/3 c lemon juice

Salt and white pepper To Taste

25 sheets phyllo pastry

1-1/2 c unsalted butter, melted

Directions


 



Heat oil in large skillet. Add garlic, ginger and onion; saute for 3-4 minutes.


Add curry powder and saute 30 seconds.


Add ground turkey and saute until done, about 8-10 minutes. Remove from heat.


Stir in raisins, pine nuts and parsley and allow to cool to room temperature. Add lemon juice along with salt and white pepper to taste.


Cut phyllo pastry into strips 3 inches by 16 inches. (Keep pastry sheets covered with damp cloth to prevent the pastry from becoming brittle.)


Place a rounded tablespoon of turkey mixture at the corner of a pastry strip. Fold to form a triangle and continue folding until complete. Brush surface with melted butter.


Bake at 350 degrees F on a greased baking sheet in a convection oven for 10-12 minutes. Brush surface with melted butter during last few minutes of baking. Serve warm, with a spicy orange sauce.


Yield: 50 servings with three triangles per portion.
