Focaccia Sandwich with Turkey and Basil Salsa

4 Large plum tomatoes, seeded and diced

2 Large cucumbers, peeled, seeded and diced

1/4 c chopped green onions

1 c chopped fresh basil

2 Medium lemons, zested

1/4 c fresh lemon juice

2 tbsp olive oil

2 tsp minced garlic

1/2 tsp black pepper

1-1/2 lbs focaccia bread, sliced horizontally

As needed fresh leaf lettuce, washed & dried

1-1/2 lbs OVEN ROASTED TURKEY BREAST, thinly shaved

6 oz Provolone cheese, thinly shaved


In medium bowl combine tomato, cucumber, green onion, basil, zest, lemon juice, oil, garlic and pepper. Cover and allow to stand 1 hour.

On large plate, place focaccia loaf upside down. Arrange lettuce over focaccia and top with turkey, Basil Salsa and cheese. Place remaining focaccia loaf over top.

To serve, slice into 12 wedges.
