Focaccia with Turkey Sausage and Red Pepper Sauce



1-1/2 lbs red bell peppers


1 Clove garlic

2 tbsp olive oil

1/2 tsp dried oregano

1 Package (8.4 oz) Focaccia bread, cut in half lengthwise


On 10-X 13-inch baking sheet, broil peppers, turning often until blackened on all sides. Place peppers into brown paper bag; close and set aside 15 to 20 minutes. When peppers have cooled to room temperature, peel, halve and remove stem and seeds.

In large non-stick skillet, over medium heat, saute turkey sausage 5 to 6 minutes or until no longer pink. Remove pan from heat and drain; set aside.

In food processor fitted with metal blade and motor running, drop garlic clove through feed tube; process 20 seconds or until finely chopped. Add pepper halves, oil and oregano. Process until smooth. Combine pepper mixture with turkey sausage.

On 10-X 13-inch baking sheet place bottom half of bread. Top with turkey mixture and remaining bread half. Heat 10 to 12 minutes in 400 degree F. oven until heated throughout.

To serve, cut focaccia bread into four wedges.
