3/4 lb smoked turkey breast, cut into 1/2-inch cubes
1 lb red potatoes, cooked, cut into 1/2-inch cubes
1 c chopped mild onion
1/2 c plain non-fat yogurt
1/4 c each low-fat mayonnaise and chopped cilantro
1 tbsp grainy Dijon-style mustard
1/2 tsp each salt and pepper
Fresh cilantro, for garnish
1 c chopped celery
1 c chopped red bell pepper
In a medium bowl combine turkey, potatoes, onion, celery and bell pepper.
In a small bowl combine yogurt, mayonnaise, cilantro, mustard, salt and pepper.
Gently fold into turkey and vegetable mixture.
Serve immediately or cover and chill 1 to 2 hours.
To serve, garnish with fresh cilantro sprigs.
