Culinary Setting
Deli Turkey, Turkey Ham


24 Large eggs

1-1/2 qt whole milk

3/4 c vanilla extract

1-1/2 tsp ground cinnamon

48 (2-oz) Slices sourdough bread

3 lbs TURKEY HAM, sliced thin

3 lbs SMOKED TURKEY, sliced thin

1-1/2 lbs Mozzarella cheese, shredded

As needed fresh fruit salad


In a shallow pan, beat eggs. Whip in milk, vanilla and cinnamon.

For each serving, dip 2 slices sourdough bread into egg mixture. Grill both sides on flat-top griddle until golden brown.

Meanwhile, on same flat-top griddle, stack 2 ounces each of turkey ham and smoked turkey. Top with 1 ounce cheese. Grill until cheese begins to melt.

Transfer turkey and cheese stack to one grilled sourdough bread slice and top with second grilled bread slice.

Serve warm with a fresh fruit salad or garnish.
