As needed canola oil
5 oz diced onion
2 lbs GROUND TURKEY
2-1/2 oz minced fresh garlic
16 oz cooked pinto beans
16 oz New Mexico red chili sauce
20 oz corn chips
As needed shredded iceberg lettuce
2 oz diced tomato
5 oz shredded Cheddar
Heat oil, add onion and sweat the onion.
Add ground turkey and cook until all pink disappears.
Add garlic and sauté until garlic is fragrant, about 45-60 seconds.
Stir in pinto beans and chili sauce. Heat to 165 degrees F.
Stir in browned turkey mixture.
Portion 2 ounces corn chips into each serving bowl.
Top with 6-ounces turkey mixture.
Sprinkle each with lettuce, 1/8-ounce tomatoes and 1/2-ounce Cheddar.
