4 lbs TURKEY WINGS
1 c light soy sauce
1/2 c dry red wine
1/2 c brown sugar
1/4 tsp dried red pepper flakes
1 tbsp fresh gingerroot, peeled and minced
1. Trim any fat from wings and discard. Split wings at each joint and save wing tips for turkey broth.
2. Cover a large shallow baking pan with heavy duty foil. Arrange wing sections, in a single layer.
3. Over low heat, combine soy sauce, wine, sugar, pepper flakes and ginger in a saucepan. Blend mixture until sugar is dissolved. Pour sauce over turkey wings, coating each piece.
4. Bake in a preheated 375 degree F oven for about 1-1/2 hours, turning wings after the first 45 minutes. Continue to bake, uncovered, until sauce has thickened.
