1/2 lb onions, finely diced
Olive oil As needed
6 lbs GROUND TURKEY
3/4 c pimento-stuffed olives, drained and finely chopped
1/3 c parsley, chopped
2 tbsp garlic, minced
1-1/2 tsp ground cinnamon
3/4 tsp freshly grated nutmeg
1 tbsp salt
1-1/2 tsp freshly ground black pepper
1-1/2 c sour cream
1-1/2 c Feta cheese, crumbled

1-1/2 lbs cucumber, small dice
Caramelize onions with oil. Cool and reserve.
Mix ground turkey, caramelized onions, olives, parsley, garlic, cinnamon, nutmeg, salt and pepper together and form into 4-ounce patties.
Grill over direct heat or cook in 350°F oven to an internal temperature of 165°F.
Combine sour cream and Feta cheese in food processor and pulse lightly to combine.
Place burger in folded pita and top with Feta mixture and cucumbers.
