Greek Turkey Salad

Ingredients

3/4 c light mayonnaise

1/2 c plain nonfat yogurt

2 Cloves garlic, minced

1 tbsp dried oregano leaves

3 c cubed COOKED TURKEY BREAST, skin removed

2 Medium cucumbers, peeled, seeded and chopped

1-1/4 c crumbled Feta cheese

2/3 c pitted and sliced ripe olives

Crisp lettuce leaves As needed

DRESSING



Mix mayonniase, yogurt, garlic and oregano together in a small bowl. Cover and chill.




SALAD ASSEMBLY



 



Combine turkey breast, cucumbers, Feta and olives together in a large bowl. Add dressing and stir to coat all ingredients with the dressing. Cover and chill for at least one hour.



Serve each portion on crisp lettuce leaves.
