1 tbsp vinegar
1 tbsp reduced-sodium soy sauce
1 tsp sesame oil
1 Clove garlic, minced
1/2 tsp ground ginger
1 lb BONELESS SMOKED TURKEY BREAST, cut into strips
2 tbsp olive oil
1/2 lb cabbage, shredded
1/2 lb collards, shredded
1 Medium carrot, peeled and diagonally cut
1 Medium onion, sliced
1/8-1/4 tsp crushed red pepper flakes
8 c cooked rice
Blend vinegar, soy sauce, sesame oil, garlic and ginger in a shallow dish. Add turkey strips and marinate 10 minutes.
Pour olive oil into a large skillet and heat over medium-high heat until hot. Add turkey strips and stir-fry for 3 minutes. Stir all vegetables and red pepper flakes into mixture.
Cover and cook 5 minutes or until vegetables are crisp-tender.
Serve over cooked rice.
