1-1/2 c thinly sliced red onion
1/2 c diced green pepper
1 tbsp olive oil
1/4 lb mushrooms, coarsely chopped
2 tsp chopped garlic
1-1/2 tsp sugar
3/4 tsp Italian seasoning
3/4 tsp salt
1-1/2 c chopped fresh tomato

6 (6-inches each) Buns, split lengthwise
In large non-stick skillet, over medium-high heat, saute onion and green pepper in oil 2 to 3 minutes or until tender. Add mushrooms and garlic and cook 2 to 3 minutes, stirring constantly. Reduce heat to medium and stir in sugar, Italian seasoning and salt. Add tomatoes and cook 10 to 15 minutes or until liquid has evaporated.
Prepare charcoal grill for direct-heat cooking. Grill sausages 4 to 5 minutes per side or until 165 degrees F is reached on meat thermometer and sausage is no longer pink in center. Add buns to grill and cook until grill-marked, about 1-1/2 minutes.
To serve, place sausages in heated buns and top with sauteed vegetables.
