1/3 c lower-sodium soy sauce
1-1/4 c TURKEY STOCK
1/4 c sherry wine
1/4 c cornstarch
1 c water
1/4 tsp garlic powder
3 tbsp sugar
1/8 tsp ground ginger
1/4 tsp onion powder
3 lbs, 12 oz SPLIT TURKEY BREAST, cut into 3/8-inch thick slices
20 Each kaiser roll, split horizontally
1 lb, 4 oz TURKEY HAM, shaved
1 lb, 4 oz Monterey Jack cheese, sliced thin into 20 slices
Heat soy sauce, stock and sherry to boiling. Blend cornstarch in water and whisk into sauce. Simmer, stirring often for 3-4 minutes.
Blend garlic powder, sugar, ginger and onion powder. Add to sauce and continue cooking 2-3 minutes.
Cool slightly and serve warm.
Cook breast slices on a preheated 385 degree F oiled grill, until golden brown, about 2 minutes per side.
Grill cut surfaces of kaiser roll until golden.
Meanwhile, arrange 1 ounce of turkey ham on grill and place 1 ounce of cheese on top. Cook for about 1 minute, until cheese begins to melt.
Place turkey steak on bottom of grilled roll and top with turkey ham, cheese, 3/4 ounce Teriyaki/Sherry Sauce and top half of roll.
Place a frilled toothpick in both sides and cut in half to serve.
