8 Medium Roma tomatoes, seeded and diced
1 lb Brie, rind removed and diced small
1 c fresh basil, julienne cut
5 Cloves garlic, minced
10 oz fresh spinach, cleaned, dried, & julienne cut
2 tsp salt
2 tsp black pepper, freshly cracked
7 tbsp olive oil, divided
2 lbs TURKEY BREAST TENDERLOINS, lbed flat
1 tbsp fresh ginger, peeled and minced
1 lime, juiced
2 lbs linguine, cooked al dente
8 oz Parmesan cheese, grated
As needed basil leaves, whole
Combine tomato, Brie, julienned basil, garlic, spinach, salt and pepper with 3 TABLESPOONS olive oil. Set aside.
Marinate turkey tenderloins in 4 TABLESPOONS olive oil, ginger and lime juice.
Grill or broil turkey until cooked thoughout.
Saute tomato-Brie mixture in a hot non-stick saute pan. Toss drained pasta with hot tomato-Brie mixture.
Julienne slice the grilled turkey breast. Keep warm for service.
Serve the pasta in warm shallow pasta bowls. Place the julienne turkey atop the pasta. Garnish with Parmesan cheese and whole basil leaves.
