Ingredients

3 lbs TURKEY BREAST

3 tbsp canola oil

1 tbsp New Mexico chile powder

1 tbsp salt

2 Large onions

3 Medium poblano peppers, seeded and julienned

8 (8-inch) corn tortillas, fried crisp

2-1/2 c Monterey Jack cheese, shredded

3 Medium tomatoes, medium dice

2-1/2 c sour cream

3 tbsp tequila

1 tbsp fresh lime juice

To Taste salt

1 tsp white pepper

Directions

Grill Procedures

Rub turkey breast with oil, chili powder and salt.

Grill until cooked through and internal temperature registers 165 degrees F.

Cool and cut into strips.

Grill onions and poblano peppers just until tender.

Assembly

Place equal amounts of grilled turkey, onions and poblano peppers on top of tostadas.

Top with cheese and melt in a hot oven.

Sprinkle with tomatoes and serve with Tequila Sour Cream.

Tequila Sour Cream

Combine sour cream, tequila, lime juice, salt and pepper.
