Ingredients

4 large whole lemons

1/2 c chopped green onions

2 tbsp low sodium soy sauce

2 tbsp olive oil

1/2 tsp ground ginger

1/2 tsp crushed red pepper flakes

2 lbs turkey breast cutlets, chops or tenderloin

2 tbsp fresh garlic, minced

1 tsp freshly cracked black pepper

Directions

Zest lemons and measure 4 tablespoons lemon zest. Cover and set aside. Squeeze lemons to measure 1/2 cup fresh lemon juice.

Combine lemon juice, green onion, soy sauce, oil, ginger and red pepper flakes.

Pour over turkey, coating evenly. Cover and marinate refrigerator 30 minutes or up to 3 hours.

Remove turkey from marinade and discard marinade.

Combine reserved lemon zest, garlic and black pepper. Rub over turkey, coating evenly.

Grill turkey over direct medium heat, about 4 to 5 inches from the heat, for 5 minutes on each side or until the internal temperature reaches 165 degrees F.
