1-1/2 lbs small red potatoes, boiled and cut into 3/4-inch cubes
2 tsp Creole seasoning
2 tsp brown sugar
1/2 c green pepper, chopped
1/2 c celery, chopped
1/4 c onion, chopped
1/4 c parsley, chopped
1 c TURKEY PASTRAMI, cut into 1/4-inch cubes
1/4 c reduced-calorie mayonnaise
1 tsp grainy mustard
In medium bowl combine potatoes, Creole seasoning, brown sugar, green pepper, celery, onions, parsley and turkey pastrami.
In small bowl combine mayonnaise and mustard. Fold into potato mixture. Cover and refrigerate salad until serving.
