Ingredients

1 lb turkey tenderloin, cut in half, then divided into 1 ½” pieces (about 8-10 tenders)

2 c panko bread crumbs

½ c full fat yogurt

1-2 tbsp milk

1 tsp garlic powder

½ tsp paprika

¼ tsp salt

½ tsp freshly ground black pepper

Olive oil cooking spray

Directions

Preheat the oven to 425°F. Line a baking sheet with parchment paper.

Pour the yogurt into a shallow bowl. If too thick for easily coating the tenders, think with ~1 tbsp of milk. Set aside.

In a separate bowl mix the panko with garlic, paprika, salt and pepper.

Dip the tenders, one at a time, into the yogurt. Shake off the excess and place in the panko mixture, gently pressing the crumbs onto the turkey.

Place tenders on the baking sheet, spray with a bit of olive oil cooking spray and bake for 8 minutes. Flip each tender and spray once more with cooking spray and then bake for an additional 8 minutes until golden and crisp! Use a meat thermometer to ensure the tenders reach a safe internal temperature of 165°F.

To serve, place on a platter alongside your favorite healthier dipping sauces, think: Green Goddess Dip, Yogurt Ranch Dip, Tahini Sauce, etc.
