1 lb mild ITALIAN LEAN TURKEY SAUSAGE, casings removed if necessary
1 tsp minced fresh garlic
1 tbsp minced fresh shallot
1 (14.5-oz) can No-Salt Added diced tomatoes
1 (8-oz) can No-Salt Added tomato sauce
1 tbsp dried basil OR 3 tbsp fresh basil
1/16 tsp crushed red pepper
1/8 tsp salt
1/4 tsp freshly ground black pepper
12 oz dry whole grain linguine
Fresh basil leaves for garnish As needed
In a large, heavy nonstick skillet, over medium heat, cook sausage, breaking sausage into small pieces with a wooden spoon. Cook until no longer pink.
Add garlic and shallot, sauté for 1 minute. Stir in tomatoes with juices, tomato sauce, herbs, crushed red pepper, salt and pepper. Simmer about 5 minutes.
Meanwhile, cook linguini (in non-salted boiling water) according to al dente package directions. Drain pasta and divide evenly among four pasta bowls. Top with sausage mixture.
Garnish with fresh basil leaves. Serve hot.
