Heart of Wisconsin-Style Smoked Turkey Quesadillas

Ingredients

10 8-inch flour tortilla shells

6 oz Gruyere cheese, grated

12 oz SMOKED TURKEY BREAST, diced

2 oz walnuts, chopped

2 red onions, grilled and diced

1 tbsp jalapeno peppers, minced

20 Small leaves romaine lettuce

10 Wedges avocado

20 Wedges Roma tomato, peeled & charred

2 tbsp lime juice

3 tbsp virgin olive oil

Freshly cracked black pepper As needed

Kosher salt As needed

Directions


 



Top each tortilla shell with grated Gruyere, smoked turkey, walnuts, onions and jalapenos. Lay on hot griddle or flattop and brown bottoms; heat until cheese begins to melt. Fold over and finish cooking. Keep warm.


In a large bowl, toss romaine lettuce with 1 tablespoon lime juice and 2 tablespoons olive oil.


In another bowl, toss avocado wedges with remaining lime juice.


Arrange romaine, avocado wedges, and charred tomatoes near center of warm 9-inch plates. Drizzle remaining olive oil over tomatoes. Season all with cracked black pepper and kosher salt.


Set quesadillas in center and garnish as desired.
