3 tbsp orange juice concentrate
1/4 c red wine vinegar
2 tsp fresh lime juice
1/2 tsp fresh ginger root, grated
1/4 tsp black pepper, freshly ground
1 lb, 14 oz melon balls, honeydew, cantaloupe or a mixture of both
10 2 oz Slices HONEY-CURED TURKEY BREAST, cut in half
5 tsp fresh mint or tarragon, chopped
For Orange-Ginger Dressing: Blend orange juice concentrate, vinegar, lime juice, ginger root, and black pepper together thoroughly. Stir well before each use.
Blend melon balls with 1/4 cup of the Orange Ginger Dressing and set aside.
For each serving: roll half slice of turkey into a cone shape and place on a small plate. Arrange melon balls inside cone, allowing some to spill onto plate. Drizzle turkey with remaining dressing (1/2 teaspoon per serving) and sprinkle chopped herbs over all. Serve immediately.
