Honey Mustard Mint Turkey Burgers with Grilled Pineapple



1 c honey

1 c Dijon mustard

1/2 c finely chopped fresh mint

Salt and freshly ground pepper To taste


1/4 c canola oil

16 Slices fresh pineapple

16 burger buns, split

4 c arugula leaves, washed, drained and chilled



Whisk together honey, mustard and mint. Season with salt and pepper to taste. Place half of the glaze in another bowl and reserve for sauce with cooked burgers.

Season turkey with salt and pepper. Portion into 5-ounce patties, about 4-½ inches in diameter. Brush both sides of burgers with honey-mustard glaze and place on grill over medium direct heat.

Cook until golden brown on first side, about 5-6 minutes. Turn over and brush browned side with additional glaze. Continue grilling burgers another 8 to 9 minutes or until thermometer inserted into center reaches 165 degrees F.

Remove burgers from grill and brush with reserved glaze.

While burgers are grilling, brush pineapple slices with oil. Grill 1 to 2 minutes per side or until golden brown.

Place buns on grill and heat 20 to 30 seconds. Remove from grill and place a burger on the bottom half of each bun.

Top each burger with a pineapple slice, arugula leaves and top half of bun.
