1/2 c unsalted butter
1/3 c flour
3 to 3-1/2 c milk
1/3 c Parmesan cheese, grated
1 Large egg, beaten
1 tbsp whipping cream
To Taste salt and freshly ground black pepper
10 Slices white bread, toasted
1 lb OVEN ROASTED TURKEY BREAST, sliced thin
As needed Grated Parmesan cheese for topping
10 Slices TURKEY BACON, cooked
10 Slices red ripe tomatoes
1. Melt butter and stir in flour to make a reasonably thick roux, stirring until smooth and light brown. Stir in milk gradually and whisk to blend. Blend in Parmesan cheese. Continue to cook until thickened, stirring constantly.
2. Beat a little of the hot mixture with the egg. Remove sauce from heat and beat in the egg mixture. Fold in cream. Add salt and pepper to taste.
3. For each Hot Brown sandwich, place two slices of toast on a flameproof dish. Cover the toast with 3 ounces of cooked turkey.
4. Pour a generous amount of sauce over the turkey. Sprinkle with additional Parmesan cheese.
5. Place entire dish under a broiler and broil until the sauce is speckled brown and bubbly.
6. Remove from broiler, cross two pieces of cooked bacon on top, and serve immediately. Garnish with tomato slices, if desired.
