6 lbs TURKEY BREAST STEAK, non-marinated

1 c reduced-sodium soy sauce

1/2 c freshly squeezed lime juice

1/2 c honey

1/2 c sesame oil

1/2 c fresh cilantro, chopped

2 tbsp fresh gingerroot, peeled and minced

2 qt pineapple chunks in juice


Cut thawed turkey breast into 1-1/2 inch cubes. Place cubes in shallow hotel pan.

Combine soy sauce, lime juice, honey, sesame oil, cilantro and ginger. Pour over turkey and coat well.

Cover and refrigerate at least 4 hours, stirring occasionally.

Remove turkey from marinade. Thread onto skewers alternately with two pineapple chunks between each cube.

Heat drained marinade to 165 degrees F. Brush onto kabobs. Cover and hold for service in refrigerator.

Per Order: Broil or grill kabobs 6 inches from heat until internal temperature registers 165 degrees F, turning once and brushing with marinade.

Serve 1 kabob and 2 tablespoons dipping sauce per order.
